[foodie challenge] lime and chili rubbed chicken breast

This post is a little [a lot] late in getting posted but I stuck with my Foodie Challenge and made this meal Saturday night. Unlike last week's meal, this one really was "quick and easy". Holy cow was it easy. I might need to find a new cook book or actually start reading the foodie blogs you lovely readers pointed out to me because if I'm going to learn how to cook WELL, I need a bit more of a challenge. Nevertheless, here was my adventure of last week's meal.

This recipe came from Betty Crocker's Quick & Easy Cookbook. After I cooked dinner and we sat down to eat, I realized this recipe was on the cover. Mine didn't look that pretty though :]

2 teaspoons chili powder
2 teaspoons packed brown sugar
2 teaspoons grated lime peel
1/2 teaspoon salt
1/4 teaspoon garlic powder
1/8 teaspoon ground red pepper (cayenne)
2 boneless skinless chicken breasts
2 teaspoons olive oil

1. Heat gas or charcoal grill. In small bowl, mix chili powder, brown sugar, lime peel, salt, garlic powder and ground red pepper. Rub both sides of chicken with oil, then with spice mixture.
2. Place chicken on grill over medium heat. Cover grill; cook 10 to 15 minutes turning once or twice, until juice of chicken is clear when center of thickest part is cut (170 degrees Farenheit)

I don't have a grill at my house [not allowed, sadface] so I cooked the chicken on the stove top. I regret not cooking it in the oven though because the skin of the chicken ended up being pretty fried. But over all, this dish was ah-mazing. The spices were perfect together. I also made some cilantro-lime rice like you get from Chipotle to go with it. Definitely a success and I'm becoming more and more comfortable with cooking.I would definitely cook this again. In fact, I did tonight :]
