[foodie challenge] homemade chicken noodle


Mike's grandpa makes the BEST chicken noodle ever. It's one of my new favorites, not going to lie. It's not really so much a soup as it is a stew. There's hardly any broth in it and tons of noodles which is why I think that's why I like it so much. Well last week Mike and I decided we'd try and make it. We didn't really use a recipe and instead just followed how we thought it would be made hah. It seemed to work so no complaints here but here's what we through in:

Ingredients:
Chicken Broth
Whole Chicken Pieces
Celery
Carrots
Yolk Noodles
Salt and Pepper

Instructions:
1. Chop the celery and carrots then saute them
2. Pour the broth into a large pan or crock pot [our crock pot was too small]
3. Add whole chicken pieces to broth and begin to cook on med-high heat
4. Throw in celery and carots once they are tender
5. When chicken is cooked, take the pieces out and pull the meat off the chicken and put it back in the pot
6. Add noodles
7. cook until noodles are tender
8. Add salt and pepper to your liking
9. Eat up!!!


I forgot to take a picture of the finished meal... I was a little too excited to start eating :] But it was soooooo good. Mike packed up the extra and took it to his family and they loved it too. I'm thinking this will have to be a routine thing to make. Maybe once a month with lots of leftovers? Yes. I think so.

This meal and my last foodie challenge meal weren't all that challenging so I think this week I'll have to get more fancy with things if I'm going to become a master chef [haha that will never happen] better start looking now! If you have any suggestions please leave them in the comment section!

  1. So here's a super easy crock pot recipe to make. (I'm not a master chef either.)

    Put in Crock Pot:
    1.5 pounds of chicken breast (whole)
    2 table spoons melted butter
    1 packet Italian seasoning mix.
    Cook on low about 4 hours
    Chop and saute:
    1/2 onion, 1 small clove garlic
    Then add to onion & garlic:
    1 can cream of chicken soup
    8oz cream cheese
    Mix together on medium heat until melted and smooth in consistency.
    Pour over top of chicken mix. Cook 1 additional hour.

    Is wonderful over egg noodles or regular flour or wheat noodles! Yum. And will make leftovers since there's just the two of you. :-)

  2. oops, forgot... sorry. When you saute the onion and garlic, add 2 tablespoons butter with it.

  4. So that's the difference between a soup and a stew? The lack or abundance of broth? Am I the only person in the world that didn't know this? Wowsers..The stewish-soupiness looks amazing!!!
