[foodie challenge] pork chops with apples

For the Super Bowl we decided to do something semi-fancy and EXTRA yummy. So we tried this pork chop recipe that was glazed with a curry-honey mix and topped with sauteed onions, pecans, and apples. Yum. On a side note, you should be very proud because I actually semi-watched the game. I had my computer handy in case I got bored but I never picked it up. Possibly a football tolerant future for me? We shall see! Anyways, here's the recipe:

Ingredients:
1 tablespoon vegetable oil, divided
4 pork chops
1/2 teaspoon curry powder
1/2 teaspoon honey
Salt & Pepper, to taste
2 apples, quartered and cut into bite-sized pieces
2 red onions, sliced
2 tablespoons pine nuts
1 tablespoon chopped basil leaves, to garnish

Instructions:
1. Preheat the oven to 250 degrees (F)
2. Add oil to a pan and saute the pork chops on both sides until brown. Transfer to a baking dish
3. In a small bowl, mix the curry powder with the honey and 1-2 tablespoons of water. Brush the meat with the mixture and season with salt and pepper. Bake for 15-20 minutes, until the meat is just cooked in the center
4. Meanwhile, add the remaining oil to the skillet, then add the apples, onions and pine nuts and fry together for 2-3 minutes. Season with salt and pepper.
5. Put the chops on a plate and add a little of the apple and onion to each. Scatter with basil
6. Enjoy the awesomeness


We used pecans instead of pine nuts for price reasons. I don't know about where you live but pine nuts are EXPENSIVE here. Plus, pecans are awesome in everything.


While I may still be learning the whole cooking thing, I do know my way with produce. I worked in the produce section of Dorothy Lane for 3 years [and still go back on breaks sometimes] and have picked up a lot of cool tricks. Like this way of cutting basil. You just stack the leaves on top of each other, roll it up and then slice it and you have these nice little strands of basil. Pretty and yummy :] I can also cut things super fast because of DLM. Score. I'm already one step closer to cooking



We ate while watching the game and it was delicious. The pork was amazing. One thing I would have changed is using more of the curry-honey glaze because it was a tad faint. Nevertheless, the meal was a hit and the apples on top were sooooooo good. 

The commercials during the game were hilarious. I have many favorites that I'm having a hard time remembering right now haha. Even better, Mike's preferred team won so the night ended on an extra good note.

Now I'm trying to stay motivated with school work [February is the worst for my seasonal affective disorder, it's always so nasty out] and get projects done. So much to do! Have a great night!
